Cottage Cheese Mac & Cheese with Spinach

Ingredients
1 Box (375g) of Smart Catelli Macaroni3 cups Spinach plus Baby Kale or other cooking greens, chopped.1/2 Tbsp Butter, unsalted1 medium onion, diced1 TBSP chopped garlic 1 1/2 TBSP Butter, unsalted2 TBSP Flour All Purpose unbleached Robin Hood2 Cups Milk, nonfat (skim milk), 1 Cup 1% Cottage Cheese 3 oz shredded Black Diamond Marble Cheddar Cheese 1 oz parmesan cheese
Directions
Preheat oven to 400 degrees.

Cook pasta according to directions on the box. In the last minute of cooking, add the cooking greens. Drain and set aside.

Meanwhile, cook the onions in the butter until soft. Add garlic, and saute for 1 minute. Add the remainder of the butter, and once melted, add the flour. Whisk until bubbly, and well heated through. Gradually whisk in the milk, and continue whisking until thickened, just shy of a boil. Season as you wish (nutmeg, salt, pepper, and maybe some dijon mustard!). Remove from heat, and stir in cottage cheese and marble cheese. Mix in the noodles and spinach and pour into an oven proof pan. Top with Parmesan cheese. Bake for 20-30 minutes until browned and bubbly.
