Caldo Verde (Portuguese Cabbage Soup)

Ingredients
8 cups water3 cups green leaf cabbage, shredded6 medium potatoes2 links of smoked sausage, pork/portuguese style3 tbsp Olive OilSalt & black pepper to taste
Directions
peel, wash & cube potatoes
place in large soup pot and cover with 8 cups water
bring to a boil and let boil until potato breaks when pierced with fork
remove pot from heat and using a handblender puree the potatoes
bring pot back to stove and bring to a boil
add shredded cabbage, olive oil and, salt & pepper to taste
over medium heat let simmer for 15 minutes
add sliced sausage and simmer for another 5-10 minutes

    This is a wonderful winter soup, but can be used as a evening meal with all the healthy foods included, served with a good Portuguese bread or Italian bread, I use Portuguese Chourico instead of the sausage, and use kale or collard greens instead of cabbage. It is one of my favorite soups. - 9/15/07
