Black-Eyed Salad

Ingredients
2 cups black-eyed peas3 medium radishes, chopped1 large carrot, grated2 stalks celery, chopped julienne style2 large green onions, diced1 cup chopped Kale2 cups iceberg lettuce or your choice of salad greens4-6 artichoke hearts, drainedNewman's lite honey mustard salad dressing on the side
Directions
Cook black-eyed peas for 25 minutes or according to package instructions. Chop, dice the raw vegetables. Add drained artichoke hearts. Mix. Serve with Newman's lite honey mustard salad dressing. Delicious!
