Nana's Wartime Soup

Butter, unsalted, 1 tbsp Carrots, raw, 2 cup, chopped Onions, raw, 2 cup, chopped Potato, raw, 3 cup diced Beef oxo cube, 2 serving Water, tap, 15 cup (8 fl oz)
Melt butter in a large soup pan.
Add chopped vegetables, and sweat on low heat, covered, until onions are transparent.
Add water, and bring to a boil. When at a rolling boil crumble in the oxo cubes.
Lower heat and continue cooking until potatoes are soft.
Serving Size: makes 15 1cup servings
