Ratatouille

Ingredients
- 2 big courgettes (zucchinis, ~1500g without the core)- 20g olive oil (1 or 2 tbsp)- 1 big onion (about 120g)- 1 small garlic clove (~20g)- 400g canned diced tomato pulp & juice- salt, pepper
Directions
Prepare the vegetables : clean the courgettes (or peel it if the skin is hard), core them and cut them into bid dices. Peel the garlic and onion, chop both (into slices or dices).

In a huge pan and on high heat, pour the olive oil and glaze the onions. Once they look pretty, do the same with the courgette dices. Add the tomatoes and the garlic.
If you think that the tomato sauce doesn't recover the courgettes enough, pour some water on it.

Season with salt and pepper, and reduce on medium heat to obtain a soft bubble. Let it cook around 30 minutes.
