Ingredients
1 pound bottom round or other stew beef (cubed)1 cup acorn squash (cubed)4 med. potatoes (cubed)2 med. onions (diced)celery, diced, about 2 cups2 to 2.5 cups mushrooms1 cup frozen peas1 cup frozen corncarrots, diced, about 2 cups2 packages dry beef gravy mix2 tsp thymeIn addition to the ingredients above I start this recipe with 1.5 to 2 c waterAdd all ingredientsYou can use any stew beef; it needs some fat to cook so don't use a leaner cut.I use 2 packages of dry beef soup mixCook on low for 6 to 8 hoursThe thyme adds a nice flavor
