creamy apple and butternut squash soup

Ingredients
cubed butternut squash, 6 cups ( use more or less depending on your preference for creamines of soup1 apple, chopped ( no skin)1 onion, chopped 1 tb cinnamon1 tb gingersalt/pepper to tasteoptional: garnish with parsley and low fat yogurt or sour cream.
Directions
sautee onions and apple in the olive oil and tb of margarine until tender.

Add the butternut squash and stir frequently , while cooking on high heat for several minutes

Add hot water ( approx 6 cups worth) and 1 bouillon cube. Add 1 tb grated ginger and 1 tb salt pepper.

cook on Medium for approx 30 minutes until Tender.

Add 1 tb cinnamon.

Transfer to blender, or use hand blender to puree..

Add plain low fat yogurt or low fat sour cream to garnish.
