Coconut Spinach Chickpea Curry

Ingredients
Spinach, frozen, 1 package (10 oz) yields (remove)Chickpeas (garbanzo beans), 400 grams (remove)Hunt's Fire Roasted Diced Tomato, 2 cup (remove)Coconut Milk (Silk), 4 tbsp (remove)Bob's Red Mill - Chia seeds - 1Tbsp=13g, 45 gram(s) (remove)*1 cup onion chopped, .5 serving (remove)*Curry, spice, 1 tbsp (remove)*Bob's RedMill Shredded Unsweetened Coconut, 4 tbsp (remove)
Directions
Saute onion with spices (can add turmeric, garlic, ginger, etc), then add the rest of your ingredients and simmer on medium low for 25 min. Let rest for ten minutes off of the heat.
