Chocolate Truffles

Ingredients
1/2 cup heavy cream16 ounces white chocolate confectioner's coatingMilk Chocolate for dipping
Directions
Cut white chocolate into 1/4 inch pieces. Bring cream to simmer in a medium sauce pan. Add chocolate, cover and remove from heat. Let sit for five minutes to melt chocolate. Stir until completely melted and smooth. Add flavoring and coloring as desired. Let cool completely. May be placed in refrigerator to speed cooling. Form into 1/4 to 3/8 ounce balls. Melt milk chocolate to 100 degrees F. Dip formed centers in melted chocolate and place on parchment covered cookie sheet to cool and set.
