Asparagus Soup

Ingredients
Ingredients: 2 lbs asparagus 1 tbsp butter 1 small clove of garlic 1 medium onion, chopped 6 cups fat free chicken broth or vegetable broth 2 tbsp low fat or fat free sour cream salt and white pepper to taste dash of cayenne pepper
Directions
In a 5 qt. pot melt butter, add garlic and onion, saute until soft.

Remove and discard the tough ends off the asparagus and and cut the asparagus into 2 inch pieces. Add to the pot with the butter, onions, and garlic. Add broth of your choice, salt and peppers. Cover and cook about 20-25 minutes or until asparagus is tender. Remove from heat, add sour cream and blend using a food processor, hand blender or blender.
