lentil soup

Ingredients
1.5 cups of lentils 8 cups of water1 large minced onion 4 cloves of garlic, slicedhalf of zuchini puréed 2 small bay leavessalt and pepper to taste 1/4 tablespoon of oregano
Directions
rinse lentils
place lentils in a medium saucepan
cover with cold water and bring to a boil
reduce heat and cover, let summer for 10 minutes
drain well and add 8 cups of hot water, onion, garlic, zuchini purée, bay leaves, an oregano.
bring to a boil and let summer for 45 minutes.
add salt and pepper to taste and let simmer for another 30 minutes or until lentils are tender. add more hot water if needed
