2 1/2 C. chicken broth divided3/4 c. dry quinoa2 Tbsp. olive oil1 c. onion1c. diced carrot1c. diced red bell pepper1/2 c. diced celery1/2 tsp. black pepper1 tsp. chili powder2 tsp. ground cumin1/2 tsp. ground coriander2 tsp. minced garlic1 can rotal2 c. diced cooked chicken 1c. shredded cheese (mexican)
Bring 1 1/2 cups broth to boil in 2 quart saucepan add quinoa return to boil cover and cook med. heat 12 min. or until quinoa has aboorbed all the broth. Remove from heat fluff cover set aside'
Heat oil in large skillet over med. heat. Add onion, carrot, red bell pepper and celery, saute until tender about 3 min. Add black pepper, chili power, cumin and coriander saute 2 min. add garilc saute 1 min. Add remaining 1 cup broth,rotal, chicken and quinoa. stir to combine.
Pour mixture into greased 9x13 baking dish. Top with shredded cheese.
