Tofu Steaks w/Ginger Sauce

Ingredients
1 package firm tofu1/4 c flour2 tbsp dry breadcrumbs1/2 tsp driend thyme1/4 tsp dried dill1/4 tsp salt1/4 tsp paprika1/4 tsp pepper1 large egg, beaten2 tsp veggie oil2/3 c rice vinegar2/3 c sugar (I do splenda)1 c water1/4 c soy sauce2 Tbsp cornstarch1/2 c water2 T minced ginger1 tsp veggie oil1 c yellow bell pepper1 c snow peas1/2 c chopped plum tomatoes2 cups cooked angel hair pasta (4 oz uncooked)
Directions
Cut tofu into slices (lengthwise) and layer with paper towels.

Combine flour and next 6 ingredients. Dredge tofu slices in flour mixture, then egg, then flour mix again. Heat 2 tsp oil over medium. Add steaks, cook 3 min each side. Cut each into halves or 4 squares.

Combine vinegar, sugar, 1 cp water, and soy sauce. Bring to a boil. Reduce heat and simmer 3 min. Combine cornstarch and 1/2 cp water then stir into sauce. Bring to a boil, cook 1 min. Remove from heat and add ginger. Keep warm.

Heat 1 tsp oil, add bell pepper and snow peas. Fry 2 min. Add tomatoes, fry 1 min. Serve over pasta, top with tofu and ginger sauce.
