1 lb. 93% lean ground beef1/2 cup chopped onion1/4 cup chopped bell pepper1 can diced tomatoes1 tspn salt1 tspn oregano1/2 tspn black pepper3 cups beef broth (low sodium, fat free)4 cups diced potatoes1/4 cup flour1 cup fat free milk8 oz. shredded 2% cheddar cheese
1. Combine beef, onion, pepper, spices, tomatoes, broth and potatoes in 5qt crock pot.
2.Cover and cook on low for 8 hours.
3. Combine flour and milk. Whisk until no lumps remain.
4. Stir into soup.
5. Add cheese and stir again.
6. Cover and cook until soup is thickened (about 30 minutes).
Serving Size: Makes 4 2-cup servings
