Lisa's Green Bean Sweet Potato Casserole

6 sweet potatoes, 1 lb ground beef8 oz frozen green beans1 12 oz carton Pacific cream of mushroom soup6 oz (half a bottle) beer (Yuengling black & tan)Season as desired - salt, pepper, oregano, garlic
Peel and chop sweet potatoes into bite sized chunks and spray with cooking spray and microwave until soft. Meanwhile brown ground beef and season, and drain. Layer sweet potatoes, green beans, ground beef in 9 x 12 casserole dish. Sprinkle with cheese. Mix together beer and soup and thin with water if necessary and pour over casserole. Cover with aluminum foil and cook at 350 degrees until bubbling. uncover and brown for a few minutes before serving.

The sweet Potatoes were a bit of a fail for us as there weren't any time directions so we kept trying to soften them in the microwave and it just never softened all the way though.. We Sauteed Onion and garlic into the beef and added some bacon as well.
