Crustless Quiche - low carb breakfast option

Ingredients
1/2 medium onion (diced)2 c. spinach (chopped)1 T butter1 c. ham (diced)1 c. cottage cheese (4% large curd)2 c. of eggs (~8 eggs)3/4 c. shredded cheese1/2 t. salt1/2 t. pepper
Directions
Spray 6 ramekins with cooking spray and place on a baking sheet. Saute onions and spinach in the butter. Mix the cottage cheese, eggs and cheese in a bowl. Season with salt and pepper to taste. Put equal amounts of the onion spinach mixture and ham in each ramekin. Pour egg mixture over the top. Give a quick stir. Bake at 375 for approx. 30 min or until eggs are set.
