Orange Ruffy 1 lbShrimp, raw, 1/2 lb deveined, peeledOysters, 8 medium or clams drained (save juice)Tomato Paste, 2 TbsV8 Vegetable Juice 1 cupCelery, raw, 1 stalk choppedGarlic, 2 clove ParsleyItalian herbsCayenne Pepper1/2 white onion chopped1 potato cooked and chopped if desiredshrimp stock 1 cup (boil shrimp shells with a bit of salt and peppers for 1 minute, simmer while cooking veggies)1 bay leaf
Cook onion and celery until onion is soft, add garlic, cook a little more. Add liquids, tomato juice and tomato paste. Bring to a boil, add celery, Italian spices, cayenne pepper, and bay leaf. Add fish and shrimp. Boil for 3 minutes. Add oysters or clams, simmer for 1 minute. Add salt and pepper to taste. Add cooked potato, if desired. Add a small squeeze of lemon.
