Bread pudding

Ingredients
1 can evaporated skim milk3 large eggs1 egg white1/4 t salt1/2 t cinnamon1/2 t vanilla extract1/3 c dates (raisins can be used)1/2C water3 light wheat english muffins1/2 C splenda granulated
Directions
Blend all ingredients except bread & dates in a bowl.Break bread into small pieces into loaf pan. Top with dates (raisins may be substituted) Pour egg/milk mixture over top. Let soak for 10 min. Preheat oven to 325. Spray non stick cooking spray in loaf pan. Bake for 40-45 mins. Makes 6 nice servings.
