Chicken Curry

Ingredients

1 tbsp. butter or margarnine1/2 cup chopped onion1 clove garlic, minced2 tblsp. cornstarch2-3 tsp. curry powder3/4 cold chicken broth, defatted2 cups skim milk2 cups diced cooked chicken1 3 oz. can sliced mushrooms, drained
In saucepan, melt butter or margarine. Add onion and garlic. Cook until onion is tender. Combine cornstarch,curry, 3/4 tsp. salt, and broth. Stir into onion mixture; add milk. Cook and stir till mixture thickens and bubbles. Stir in chicken and mushrooms. Heat through.
Serve over hot cooked rice and pass the condiments-
peanuts, chopped tomatoes, chopped olives, diced boiled eggs.
(Also raisins, coconut, chutney)
Or, serve in East Indian Rice Ring.
Makes 5 or 6 servings.
