4 cups water1 cup dried red lentils1 medium onion, diced2 cloves garlic, minced1/2 tsp ground turmeric1/2 tsp ground coriander1 tsp ground cumin1 tsp curry powder2 tsp chicken bouillon1 cup frozen mixed vegetables1 cup diced red bell pepper1/2 cup frozen peas1 1/2 cups diced tomatoes1 tsp sriracha hot sauce
Bring water to boil, with dried red lentils, chopped onion, and spices, reduce heat to medium, cover, and stir frequently. When lentils are soft (about 25-30 minutes), add vegetables and tomatoes. Simmer for another 15 minutes.
