Ingredients
1 tbsp. Olive Oil1 large chopped onion2 tbsp. turkey bacon bits3 cloves garlic, minced3 links Turkey Italian sausage, casing remove4 cups unsalted chicken stock4 cups water1 large potato, halved and sliced 1/4"1 cup skim milk3 cups chopped kalesalt, pepper, Cajun seasoning
Directions
heat olive oil, add onion, garlic and bacon bits. Cook 5 minutes or so. add turkey and cook til browned. add chicken stock and water, simmer for 20 minutes. add sliced potato and cook 10 minutes or until just tender. add milk and kale, salt and pepper to taste. cook 3-5 minutes. Turn off and let sit for 10 minutes.
