Ingredients
3 tbsp Canola Oil1 Tbsp White flour1 cup chicken broth (Used Pacific Natural for low sodium)1 Tbsp Chili Powder1.25 cups Meijer Natural's Tomato Puree (instead of paste)1 tsp ground Oregano1 tsp Tone's Southwest Chipotle Seasoning
Directions
In a medium saucepan heat oil (about 45 seconds, not too hot!!), add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Warm Chicken broth in the microwave, about 3 minutes. Add stock. *Note - The reaction is quite surprising and will pop and sizzle, be careful!

Add chili powder and tomato puree, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.
