Chicken Curry

Ingredients
2 tbs olive oil3 tbs curry powder1 tbs cumin2 small onions, small chop2 cloves garlic, mincedapp 5 tsp ginger, gratedsalt and pepper to taste5.3 oz oikos plain nonfat greek yogurt1 cup skim milk1 cup lite coconut milk1 lb diced chicken breast1.5 cups diced potatoes
Directions
heat oil to medium. add curry and cumin -stir for 1-2 minutes til fragrant. add onion, garlic and ginger. continue cooking 3-5 minutes. Add yogurt, milk and coconut milk. stir til combined. salt and pepper as desires. when boiling, add chicken and cook about 20 minutes. add potato and cook another 15 - 20 minutes until potato is tender. serve over rice. I use the coconut milk left in the can as part of the liquid in my rice.
