MamaRuby's Split Pea with Spinach Soup

1 pkg of dry split peas (450grams)6 cups of chicken broth or veggie broth, sodium reduced4-5 cups of water (depending on how thick or thin you like your soup)2 medium carrots or a handful of baby carrots1 medium Onion chopped1 300g of frozen spinach1-3 garlic cloves1 tbs oregano1 tea pepper 1/2 tea cumin powder, not the seeds
Combine Split peas and chicken broth or veggie broth. Bring to a boil, reduce head and put on lid, let simmer for 1 1/2 hrs.
Cut up your onion and carrots, defrost spinach, combine all the spices and add to split pea mixture. Add more water if desired. I find it gets pretty thick.
You can also freeze this recipe, serves 8-10 people
