Cuban Black Bean Soup

Ingredients
1 lb dried black beans1 medium onion chopped1 red pepper chopped3 cloves garlic1 tbsp olive oilsalt & pepper2 tbsp cider vinegarwater
Directions
Saute onion, pepper & garlic in oil in large pot. Add beans & cover with water to 2 inches above beans. Bring to boil and lower temperature to keep simmering. Add 1 tsp salt & 1 tsp pepper. Add vinegar & cook for 2 hours until beans are breaking down & creating a creamy soup.
