Healthier Crockpot Butter Chicken

Ingredients
1.5 lb boneless skinless chicken breast, cut into bite size pieces1/2 onion, finely minced3 cloves garlic, minced or grated1 tbs freshly grated ginger1-2 tsp curry paste (red curry paste)2 tbs garam masala1/2-1 tsp cayenne pepper adjust to taste1/4 teaspoon salt1 (6ounce) can tomato paste1 (19 ounce) can coconut milk, light works 1/2 cup greek yogurt1/4 cup almond milk
Directions
In a large glass measuring cup or bowl mix together the coconut milk, greek yogurt and almond milk. Stir in the tomato paste, garlic, ginger and all the spices. A whisk works well.

Spray the inside of crockpot with cooking spray. To the crockpot sprinkle the onion over the bottom. Add the chicken and then pour the coconut milk mixtur over the chicken to cover completely. Place lid on crockpot. cook on high for 4 hours or on low for 6-8 hours. Season with salt and pepper when served. Serve over rice with Naan bread.
