1 1/2 tsp. vegetable oil1/2 white flour1/2 C. whole wheat lour1 tsp. baking soda1/4 tsp salt2 large eggs1/4 tsp cardamon seed1 tsp. garam masala1 C. sugar1/4 C. ghee1 1/2 C/ grated carrots2 Tb. shelled pistachios2 Tb. chopped almonds2 Tb. raisins
Preheat the oven to 350 degrees. Rub a 9" pie pan with the oil and flour it. Sift the flour, salt and soda together. Beat the eggs in a large bowl. Add the cardamon, garam masala, sugar and drizzle in the melted ghee. Add the flour. Fold in the carrots, nuts, and raisins. Pour into the cake pan and bake for 35-40 min. or till a toothpick comes out clean.
