Vegan Chili Beans

1b pound bag of pinto beans prepared 3 tablespoons extra virgin olive oil Package Lightlife Smart Ground 2 cups of chopped yellow onion1 cup chopped green bell pepper1 cup chopped red bell pepper3 large cloves chopped garlic1 cup frozen cornCumin seeds/powderChili powderRed pepper flakesSaltPepper
Prepare beans as desired. I use a little sautéed onion and garlic for flavor, salting a little after beans are cooked.
Sautee onion, peppers and garlic in large pan until tender. Add the entire package of Lightlife Smart Ground crumbling and cooking it in the vegetables some. Add 5 cups chopped fresh tomatoes and one large 28 oz. can of diced tomatoes. To this add cumin seeds and or ground cumin to taste...I like lots! Add red pepper flakes using just a few at first adding a little more as you like. Chili powder salt and pepper to taste. Let it all simmer for at least an hour.
When it is thick add the cup of frozen corn. Then simply combine it with your cooked beans and heat some to let the flavors blend.
Serving Size: Makes 12 servings of 1 cup each.
