Roasted Eggplant Spread

1 medium eggplant1 medium red pepper 1 yellow pepper 5 garlic cloves 1/2 medium red onion4 tbs EVOOsalt and pepper
Chop all vegetables in large chunks. Toss with EVOO. Season with salt and pepper. Place on baking sheet and roast in 350 degree oven for 40 min till tender. Put in food processor and process until small chunks remain. Serve warm on a whole wheat pita.
