Sarah's Curry Tofu Cashew Salad

Ingredients
1 blocks baked tofu 7 oz 2% Fage plain Greek Yogurt3 T white wine vinegar 3 T mango chutney (recommended: Major Grey's) 1 ½ tablespoons curry powder 1/8 t garlic powder1 tsp truvia blend¼ teaspoon saltBell peppers (green/red/yellow)Slivered carrots1/4 cup golden raisins 1 cup whole raw cashews
Directions
For the dressing, combine all ingredients except vegetables, raisins and cashews in blender. Process until smooth. Add the tofu and mix well by hand.

Refrigerate for a few hours to allow the flavors to blend. Add the cashews/almonds and serve at room temperature.
