Fried Cauliflower Rice

Ingredients
One large head of cauliflower1/4 large sweet onion1 medium green pepper2 Tbsp of Olive Oil2 eggsSeason with Salt, Pepper, and Garlic Powder to your liking.
Directions
Put cauliflower through food processor to get "rice."
Put in microwave safe dish and cover, microwave for 4 minutes.
While cauliflower is in the microwave, brown the onions and peppers (diced) in the olive oil.
When the cauliflower is done, add to pan with peppers and onions.
Crack two eggs and beat until yellow, then pour over veggie mix and you have Fried Cauliflower Rice.

Add salt, pepper, and garlic powder if you like.
