Vegetarian Masaman Curry

Ingredients
* Olive Oil, 2 tbsp * Onions, raw, 1 large * Garlic, 3 cloves * Tofu, extra firm, 1 block * Chicken stock, home-prepared, 2 cup * *Coconut Milk, 1 cup * Peanut Butter, smooth style, 1/2 cup* * Salt, 1/2 tsp * Pepper, black, .1/4 tsp * 4 medium sized carrots, peeled and cut into 1-inch pieces * 3 medium sized potatoes, peeled and cut into 1-inch pieces * Peas, frozen, 1 cup * Basil, 3 tbsp
Directions
In large skillet over medium heat add oil, swirling to coat the bottom of pan. Add onion, garlic, and tofu and saute until tofu is slightly brown, about 5-7 minutes.
Meanwhile combine stock and coconut milk in large saucepan and bring to simmer. Add peanut butter, salt, and pepper and stir until well incorporated. Add carrots and potaotes and simmer until they are almost fully cooked. Add tofu and onion mixture to curry, along with peas. Simmer on low for about 5 min.
Stir in basil just before serving.

    This was listed as vegetarian masaman curry and one of the ingredients was Chicken Stock, "Not Vegetarian." And the most important ingredient, the masaman curry paste was not included in the list of ingredients. Since I shopped for this recipe based on the ingredients list, it was disappointing. - 2/13/10

    I love masaman curry, but if you're really making this for a vegetarian, leave out the chicken stock and use veggie bullion instead. I often order this with seitan (veggie duck or wheat gluten) instead of tofu. It really soaks up flavor and tastes much better than tofu. - 6/26/09
