Cauliflower Rice w/lime & cilantro

Ingredients
1 Head of cauliflower, broke in florets1 Tablespoon of water1 Lime, juiced & zested1/2 Cup fresh cilantro2 Tablespoons of olive oil
Directions
Pulse cauliflower in food processor until it resembles rice.
Place cauliflower rice and water in covered bowl
Microwave on high until tender, about 7 minutes.
Stir in lime zest & juice, cilantro, and olive oil.
Great by itself, or use in place of rice anywhere!
