Lemony lentil soup

2 cups lentils6 cups water1 tsp olive oil2 cloves chopped garlic2 bay leaves1/2 tsp cumin1/4 tsp red pepper flakes1/4 tsp turmeric1 med Onion, chopped1 med Zucchini, choppedCelery, 2 stalks, chopped1 tBsp lemon juiceZest of one lemon
Wash and rinse the lentils, add them with the bay leaves to a large pot with six cups of water. Bring to a boil. Turn heat down to a simmer and cook for 15 minutes.
While the lentils are cooking, add the olive oil to a pot on med heat, add onions and garlic. Cook until soft, then add lemon zest. Sauté 2 minutes, then add the spices and sauté 2 minutes more. Add the celery and zucchini for 5 more minutes of cooking until the veg is barely soft. Add the spicy vegetable mixture to the lentils and bring to a boil wit vegetable bouillon and salt to taste. Cook for 20 minutes. Add the lemon juice when complete.
