Low Fat Zuccini Bread with Protein Powder

Ingredients
3 Large Eggs1 Cup Granulated Sugar1/2 Cup Splenda1 Cup Unsweetened Applesauce2 Cups Shredded Zuccini1 tsp Salt1 tsp Cinnamon1/4 tsp Baking Powder1 tsp Baking Soda2 Scoops Protein Powder, Unflavored (I used Quest Brand)3 Cups All Purpose Flour
Directions
Preheat oven to 350.

In medium bowl mix eggs, sugar, splenda, and applesauce until well blended. Add Zuccini.

In a separate bowl mix dry ingredients (salt, cinnamon, baking powder, bakng soda, protein powder, flour). Make sure these are blended well before adding to wet ingredients.

Add dry ingredients to wet ingredients.

Split mix between 2 greased bread pans.

Bake 1 hour or until toothpick inserted into the center comes out dry.
