Cauliflower pepper bacon frittata

Ingredients
Cauliflower, raw, 1 cup Yellow Peppers (bell peppers), 3 strips Applewood Smoked bacon, 1 serving Cheddar or Colby Cheese, Low Fat, 1.5 oz Egg Whites - (All Whites) 100% Liquid Egg Whites, 0.50 cup Egg, fresh, whole, raw, 4 large (remove)Cottage Cheese Fat Free (Darigold), 0.25 cup (remove)
Directions
In 2-6 cup muffin pans spray pam to prevent sticking. Add veggies and broken up bacon. Mix eggs, cheese, and cottage cheese in a bowl. Then pour over veggies in muffin cups. Place in over at 350 for 45 minutes or until fully cooked.

Serving Size: Makes 12 egg muffins!
