Japanese Potato Salad

Ingredients
50 grams Red Potato1 Tbls. Kraft Mayo Fat Free Mayonnaise Salad Dressing1/4 C.Carrots, raw1/4 Cucumber (with peel) 1 slice Louis Rich Turkey Bacon
Directions
Wash red potato and carrot, peel, cut into quarters and place into a small sauce pan. Add enough water to cover and cook until soft. Drain water off and with the back of a tablespoon mash the carrot and the potatoe, leaving a few chuncks.

While the potato and carrots are cooking, clean the cucumber and cut into small pieces or shred. Cook the bacon in the microwave (this makes it crisp, cook about 50 seconds.) Break bacon into small pieces.

After you have mashed the potato and carrots, add the cucumber, bacon and mayo. Mix well, this is one serving. This is great warm or cold.
