Crock Pot Rice Pudding

Ingredients
1 c brown rice, uncooked2 c almond milk1 T smart balance buttery spread1 t vanilla1 t cinnamon, plus extra for garnish1/4 t saltraisins, optional
Directions
Spray crock pot with non-stick cooking spray. Add all ingredients and stir. Cover and cook on low for 2 hours. Stir and cook for another 2 hrs on low, or until rice is tender and cooked through.
Transfer to bowls and refrigerate until chilled. Garnish with more cinnamon.
