Asian Chicken Squash Curry

Ingredients
Marinate chicken in ginger (4 tbsp), yellow curry (1-2 tbsp), fish sauce (4 tbsp), garlic (3) and chopped lemongrass (2 stalks).Brown chicken, then add:1 cup veg broth2 carrots2 onions (steamed or pre-cooked a little)1 sweet potatoe2 cups butternut squash1 can (400ml) coconut milkNutritional info above calculated on major ingredients only.
Directions
Cook slow heat for 2-3 hours. Serve on top of brown rice.
