Zucchini Turkey Chili

2 lbs ground turkey.5 large onion diced1 small poblano pepper diced3 cloves of garlic finely chopped28 oz canned NSA (No Salt Added) diced tomatoes16 oz canned NSA tomato sauce16 oz canned kidney beans, drained and rinsed16 oz low sodium black beans, drained and rinsed2 tbsp chili powder2 cups zucchini, chopped2 cups yellow neck squash, chopped1 1/2 tsp ground cumin1 tsp red pepper flakes
Brown the ground turkey with the diced onion until fully cooked. Add all ingredients into a crock pot and cook on low for 6-8 hours. If you have never used the poblano pepper before it requires removing the thick waxy skin before cooking with it. There are many tutorials online to show you how. Or just omit it. Use whatever spices you are comfortable with and make it your own!
