Non-Dairy Chicken Eggplant Parm.

Ingredients
1 cup egg plant1/2 cup spaghetti sauce2 TBSP tomato paste1 clove chopped garlic1/8 cup chopped onion1 chicken breastfresh parsleyvegan mozzarella cheese shreds
Directions
pour 2 tsp olive oil in pan

cut chicken breast in half and place in pan, cook on med. heat

while chicken is cooking, mix half cup canned tomato or spaghetti sauce with 2 tbsp tomato paste, onion and garlic in a bowl. Add basil, parsley and garlic powder to taste

when chicken is fully cooked, lay sliced eggplant in pan, cover and cook 3-4 mins

pour sauce mixture over chicken and eggplant in pan, cook 2-4 mins more

remove from heat, serve sprinkled with vegan mozzarella cheese and fresh parsley
