Will's Vegan Butternut Squash Marinara Sauce

Ingredients
Butternut Squash, 1 cup, cubes Oregano, 3 tspRed Bell Pepper, cubed, 1 cup Garlic, 3 clove Onions, raw, 1 cup, chopped Parsley, 1 tspBasil, 1/2 tspExtra Virgin Olive Oil, 1 tbsp Vegetable Broth,1/4 cupRice Vinegar, 3 tbsp (I prefer rice vinegar, but any vinegar works)4 serving Tomatoes, Roma, Fresh, 1 Med
Directions
Place squash and bell peppers on a baking sheet. Bake for 20 minutes in a 350 degrees preheated oven. While squash and peppers are roasting, sauté garlic, onions, oregano, and parsley in olive oil over medium heat for 3-5 minutes. Set aside. Remove squash and peppers from oven. Place all ingredients in blender, blend till smooth. Pour into a saucepan on low to medium heat and let simmer, approximately 10-15 minutes. Use more or less vegetable broth to reach desired thickness. Serve over pasta, vegetables, or use as a pizza sauce or dipping sauce.
