Chicken Fried Rice - Low Fat

Ingredients
3 Cups White rice (cooked)7 Oz. Chopped Chicken (cooked)1/2 Cup Diced Onions1/2 Cup Diced Carrots2 Cloves Garlic1 Cup Frozen Peas3 Mushrooms, Slices1/2 Cup Chicken Stock3 Eggs2 Tbsp Soya SauceCooking Spray
Directions
Spray frying pan with cooking spray, add onions, carrots and garlic, fry until carrots are tender. Add frozen peas and chicken stock, cook for a few minutes until peas are almost done. Add Chicken and mushrooms and fry until heated. Meanwhile fry eggs in a separate frying pan. Add rice to chicken mixture and mix together. Add soya sauce and eggs and stir together.

Serve Immediately
