Place all ingredients in Crock Pot:Take a 3 lb pork roast (chicken can be substituted for less calories and tastes just as good)Dice Celery and toss inSlice onion (entire onion) 1 can diced tomatoes1 large can green enchilada sauce (I prefer Las Palmas, but any brand will do.)Cummin 1/2 tsp (or more depending on your taste)Granulated Garlic 2tsp (or more depending on your taste)Salt and Pepper to taste.(You may also add in green chilies and/or bell pepper, if you or your family likes, I add it if I have it on hand.)
Put all ingredients in the crock pot and turn on low. The longer it cooks the better the meat turns out. I normally cook it from raw state for about 5-6 hours on low, or from frozen 6-8 hours depending on your crock pot.
