Amy's Chicken Carbonara

Ingredients
8 oz. Smart Taste Pasta1.5 Pasta Water Reserve2 lbs. Very thin sliced Chicken Breast2 Tbsp Olive Oil1.5 C Evaporated Milk4 Tbsp. Bacon pieces1 C Egg Beaters2 C Sliced Mushrooms1.5 Red Onion1/2 C Asiago Cheese1/4 C Parmesan Cheese
Directions
Boil the pasta Al Dente. Saute Chicken breast in olive oil, garlic and add some italian seasoning. Whisk together Egg Beaters, Evaporated Milk and pasta water reserve. Saute Red Onion and Mushrooms in olive oil. Add Milk mixture to mushrooms and Onions. Add bacon, add Asiago Cheese. Let boil until slightly thickened. When done add parmesan cheese. Serve with chicken.
