Quiona Coconut Breakfast Cereal

Ingredients
Quiona, dry, 1 1/2 cupsCoconut milk, Thai Kitchen, 1 canChia Seeds, 1 T, groundVanilla Extract, 1 tsp
Directions
Rinse quiona thoroughly, place in skillet and stir until dry. Add water and coconut milk and simmer for 15 minutes. Add chia seeds and simmer 5 additional minutes. Remove from heat, stir in vanilla. Pack into 1/2 cup measuring cup as mold, turn out onto parchment paper. Store in refrigerator for up to one week.

Serve with fruit.
