Peach - Oat Almond Muffins

Ingredients
1 cup whole wheat pastry flour1 tbsp baking powder½ tsp salt1 tsp ground ginger1 cup quick-cooking rolled oats½ cup low-fat plain soy milk1/4 cup unsweetened applesauce3 tbsp canola oil3 tbsp honey2 medium peaches, peeled and diced1/4 cup slivered almonds
Directions
Preheat oven to 400F. Grease 12 muffin cups.
Combine flour, baking powder, salt, ginger and oats in a bowl.
Separately, mix soy milk, applesauce, oil and honey.
Stir wet ingredients into the dry mix until just moistened.
Fold in peach bits and almonds gently.
Bake 20-25 minutes, until tests done. Remove from cups immediately and cool on wire racks.

    I used regular whole wheat flour since I didn't have pastry flour, and they still came out fine. Next time I might try vanilla soy milk because I wish they were just a little bit sweeter. Good recipe! - 9/12/12
