Zucchini Soup

Ingredients
4c sliced zucchini1 onion, chopped3 cloves garlic, minced1T olive oil2c chicken brothsalt and pepper to taste
Directions
Saute zucchini, onion, garlic in olive oil with salt and pepper. Reduce heat and cover- cook about 20 minutes or until everything is clear. Add chicken broth and blend with immersion blender until soup is very smooth- becareful, the soup is hot! Enjoy with some sour cream on top.
