Cream of Zucchini Soup with Hemp Seeds

Ingredients
8 cup, sliced Zucchini 4 medium Carrots, raw 5 clove Garlic 4 stalk, medium (7-1/2" - 8" lon Celery, raw 1.50 tsp Himalayan Pink Salt (by WJHUNTER) 8 tsp Emeril's Italian Seasoning (by GGBARKER48) 1 tbsp Oregano, ground 3 tbsp Hemp Hearts- raw shelled hemp seeds 1 tbsp Kal Nutritional Yeast Flakes 2 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil 4.5 cup (8 fl oz) Water, tap
Directions
Chop all veggies. Heat coconut oil in large soup pot. Add onions, carrots, celery, and garlic. Saute 5 minutes. Add zucchini. keep stirring and cook another 5 minutes. Add 4 cups water, salt, and spices. Bring to a boil. Simmer on medium heat for 25 minutes.

Using an immersion blender, blend soup till creamy.

Serve with 3 Tablespoons Hemp Hearts and 1 Tablespoon Nutritional Yeast, and season with pepper to taste.

It's also great with a drizzling of lemon or lime juice.
