Delicious Sweet Potato Salad2 pounds sweet potato or yams, peeled and diced into one-inch cubes1 medium red (Spanish) onion, finely sliced or diced1/2 large red bell pepper, finely sliced or diced2 ribs of celery, dicedOptional: I also add a cup of cooked mixed vegetables (for variety and color) Dressing5 Tbs extra light olive oil (I used Extra Virgin Olive Oil)1 tsp cumin2 Tbs wine vinegar1 tsp curry powder3 tsp sugar1 tsp. Tobasco hot sauce or sprinkle with cayenne if you like it more spicyFlat leaf parsley
Arrange potatoes in an even layer on a non-stick baking sheet. Coat with cooking spray or toss with a small amount of oil before spreading on sheet and sprinkle with dash of salt.
Bake at 400° for about 15-20 minutes or just until tender. Let cool slightly
To Serve: mix well - baked sweet potato, onion, bell pepper (any other veggies) and dressing. Garnish with parsley. You can also garnish with crumbled bacon, but makes it more calories.
It is eaten at room temperature as the hot and cold combine.
Can also serve in lettuce cups - looks fabulous.
